Meal & A Melody: Flourless Blueberry Muffins & H.E.R.
For some reason every time we go grocery shopping, we always get blueberries, and then they sit...until they go bad. Normally in the summer time, I love eating cold berries, but when it gets cold, I'm unlikely to eat them unless they are in a smoothie. My son will sometimes eats them for lunch, but last week, he wasn't really eating them so we had a bunch left over. It's the holiday season and I usually love baking around this time so, I decided, I'm not wasting any food, let me make some muffins. I found this recipe on makingthymeforhealth.com and it was soooo tasty! I modified it slightly and added cashew butter as opposed to almond butter. Because of the mildness of the cashews, it turned out so lovely.
FLOURLESS BLUEBERRY BANANA MUFFINS

- 2 ripe medium-size bananas
- 1/2 cup almond butter OR cashew butter
- 1/4 cup unsweetened vanilla almond milk
- 2 eggs
- 1/2 cup pure maple syrup
- 1 tablespoon vanilla extract
- 2 and 1/4 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup fresh blueberries (or frozen and defrosted*)
*I forgot to add eggs before I started to blend the ingredients and adding blueberries. Be sure not to blend the blueberries in, but stir after other ingredients have been mixed. Although it still tastes great, it doesn't come out as pretty.
Whenever I'm cooking I like to listen to music as it is very therapeutic for me. Lately, H.E.R. has been heavy in my rotation of playlists so I decided to turn this on while cooking. She created 2 Volumes and recently combined them into one album and it's such an amazing body of work. Very soulful, relatable, and nostalgic because of the 'true to R&B' sound it brings.
